This might seem a little off topic, but here it is. One of the main reasons why I became very aware of what I eat is due to my husband's sensitivity to many types of food. Specifically, he's sensitive to gluten, high amounts of salt, and large quantities of sugar. But, it's gluten that really bothers him the most. Although he has tested negatively for Celiac disease, he still has a high sensitivity to any food product with gluten. I think that many people might be sensitive to gluten (and they don't necessarily have Celiac) -- they just don't know it. Not being able to handle gluten in one's diet limits you on many things -- basically, any food with flour, wheat, or any grain related to it. Think about it....that rules out a lot of potential recipes! The good thing is that there are plenty of alternatives -- and many of the alternatives are better than the "real thing."
Some of my favorite gluten-free products include:
· Midel cookies: ginger snaps and cinnamon flavors. Here's a quick recipe to try. Get some plain cream cheese, add a couple tablespoons of lemon juice, a dash of cinnamon and blend until smooth. Put the mixture in between two Midel cookies (either flavor). Chill for 3 hours in refrigerator. Top with fresh fruit (blueberries are my personal favorite). So yummy!
· Namaste Spice cake: this cake is amazing. For our wedding (the groom's cake), I made two spice cakes and had our chef put cream cheese icing on it. The gluten-free cake was devoured -- my beautiful bride's cake...well, let's just say it looked great.
· Tinkyada Rice Pasta: I wrote about this the other day. It's worth mentioning again. This pasta has changed our dinner lives! It's wonderful to make savory Italian meals that my husband can enjoy too.
